I am not so sure about the other colors, but the green symbolism is the green light over the dock that Gatsby sees where Daisy lives. This light represents his dream. The American Dream. Later they mention this green light fading, and disappearing in the novel (Nick says this), and this is because once Gatsby had (or so he thought) Daisy, his dream was gone and maybe the dream was better than reality. Hope this helps you out...
