Three main quotes come to mind, though there are certainly others that are important and that are worth noting. The first is in Act I scene i at the end (beginning at line 11) in which the 3 witches introduce one of the main themes of the play, that of the places of good and evil being changed by Macbeth's actions. The second is a good example of dramatic irony, in which Duncan praises the "pleasant seat" of Macbeth's castle before being murdered (I vi at the beginning). The third is in V v beginning at line 18 or thereabouts in which Macbeth reflects on the meaninglessness of his life and his wife's death.

There are many other quotes of importance, depending on the theme or aspect of the play that's being emphasized.
